Crispy goat's cheese with avacado espuma - Sliced chicken tandori, Penne with vegetables - Caramelised pears, light spicy honey cream.

Techniques taught during the course :
Using a syphon, making an espuma, slicing poultry, cooking tandori, cooking the pears.
