This dessert combines a soft sponge cake with vanilla-flavoured marzipan, on a crunchy base of Valencia almonds and white chocolate, enhanced with Camargue fleur de sel. It is filled with apricot compote, Madagascan vanilla mousse, and topped with an apricot and vanilla jelly.
