Book "The Logs"
Lenôtre unveils, in a book published by Flammarion, 30 recipes for Christmas logs. In the spirit of transmission dear to Gaston Lenôtre, the first great pastry chef to share his knowledge through essential books, Guy Krenzer, Director of Creation at Lenôtre, reveals all his manufacturing secrets. The book, divided into two parts, brings together 15 high pastry logs, reminding us that the House was one of the first to initiate artistic work around exceptional logs. In its second part, this book presents these 15 recipes, designed by the chefs of the Lenôtre Culinary Arts School to be reproduced at home, without the need for professional equipment or rare ingredients. Prefaced by Pierre Hermé, it is a work that allows everyone to experience the excellence of French pastry.
