The original recipe by Gaston Lenôtre remains unchanged. The Valencia almonds, refined to perfection, are still there, as well as icing sugar, egg whites, and caster sugar. "Using a French meringue allows us to release all the aromatic substances of the almond and enhance its sweet, milky, and slightly herbaceous flavours," explains Guy Krenzer. This results in the characteristics of a good macaron with a smooth surface, a slightly crunchy crust, and a melting heart. Tasting advice
