The original recipe by Gaston Lenôtre remains unchanged. The Valencia almonds, carefully aged, are still there, as well as icing sugar, egg whites, and caster sugar. "Using a French meringue allows us to release all the aromatic substances of the almond and enhance its sweet, milky, and slightly herbaceous flavours," says Guy Krenzer. This way, we find the characteristics of a good macaron with a smooth surface, a slightly crunchy crust, and a melting heart. Tasting tip
