The original recipe by Gaston Lenôtre remains unchanged. The perfectly aged Valencia almonds are still there, as well as icing sugar, egg whites, and caster sugar. "Using a French meringue allows us to release all the aromatic substances of the almond and enhance its sweet, milky, and slightly herbaceous flavours," explains Guy Krenzer.
