The original recipe by Gaston Lenôtre remains unchanged. The Valencia almonds, matured to perfection, are still there, along with icing sugar, egg whites and caster sugar. "Using a French meringue allows us to release all the aromatic substances of the almond and enhance its sweet, milky and slightly herbaceous flavours," says Guy Krenzer. This results in the characteristics of a good macaron with a smooth surface, a slightly crunchy crust and a melting heart. This delight in the historical recipe and the original craftsmanship, based on the French meringue technique, is one of the best-sellers of the Maison!
