Preparation of Mara des Bois strawberries
The chefs at Maison Lenôtre have brought a new perspective to the traditional jam recipe. Exclusively made from fruits carefully selected for their origin (apricot from Languedoc-Roussillon, citrus from France) or their variety (Willamette raspberry, Mara des bois strawberry), these compositions contain less sugar than a classic jam to preserve the full intensity of the fruit. A play of subtle correspondences where each flavour reveals the purity of the fruit.
