The Bourdon, the centrepiece of the collection, draws inspiration from the majesty and power of the largest bell of Notre-Dame, a historical emblem resonating in the heart of Paris. This spectacular creation stands like a chocolate sculpture in tribute to the bells of the cathedral. Designed by Étienne Leroy, Head Pastry Chef at Lenôtre and World Pastry Champion, it embodies the culmination of exceptional craftsmanship, enhanced by precision and creativity. Its elegant structure, finely chiselled, recalls the ornaments of the bells, true works of art suspended in the Parisian sky. Every detail has been shaped with remarkable meticulousness: from delicate arabesques that evoke metal lace to graceful curves highlighted with cocoa powder.
