The original recipe by Gaston Lenôtre remains unchanged. The Valencia almonds, perfectly refined, are still there, as well as icing sugar, egg whites and caster sugar. "Using a French meringue allows us to release all the aromatic substances of the almond and enhance its sweet, milky and slightly herbaceous flavours," says Guy Krenzer. Thus, one can find the characteristics of a good macaron with a smooth surface, a slightly crunchy crust and a melting heart. This pleasure in the historical recipe and the original know-how, based on the French meringue technique, is one of the best-sellers of the Maison!
